I recently read an article about the beneficial effects of Cinnamon regarding sugar metabolism by the body.  I did some research and came across this website, and several others, but this seems the most comprehensive.  I even asked my grandmother about it (she has diabetes), and she takes two cinnamon capsules every day prescribed by her doctor at Mayo Clinic.

I really like cinnamon already, so I thought it would be silly to just take tasteless capsules and let a great opportunity pass me by.

So I've created a new snack/light breakfast for myself:

I take a bag of a single apple sliced and toss a teaspoon of cinnamon into the bag.  This I eat along with two mozzarella sticks.  It is truly wonderful.

You should all try it out, and if you have an issue with cutting up an apple every day, get an apple cutter, or buy the pre-sliced apples from Costco, they're really cheap.  ^_^
